
Spicy noodles with green asparagus

Asparagus are known as a great seasonal vegetable. White as well as green asparagus are very popular in Europe. The Asian cuisine has loads of great recipes, which incorporate green asparagus. This great Asian dish combines the delicious flavour of the asparagus together with a creamy peanut sauce, spicy noodles and tasty prawns. It will only take 20 minutes to put a great mildly spicy Asian dish on the table for your family to enjoy. If you're not a big fan of prawns then don't worry, you can also use chicken instead. This recipe is really easy and delicious!

Ingredients
- 1 tbsp Peanut Oil
- 400 ml Coconut Milk (18% Fat)
- a handful Peanuts
- 400 g Pancit Canton Noodles
- 2 tablespoons Sriracha Chilli Sauce
500 g Green asparagus sliced in pieces of 2 cm
300 g prawns peeled & deveined
1 garlic cloved crushed
2 spring onions sliced in rings
A few branches of coriander as a garnish
2 tbsp peanutbutter
Preparation method for Spicy noodles with green asparagus
- Peal and wash the green asparagus and slice in to 2 cm pieces.
- Heat a splash of oil in a wok and fry the prawns together with the garlic and chilli sauce. Once cooked remove the prawns from the wok and leave to rest on a place covered in aluminium foil.
- In the same pan, wok the green asparagus. After a few minutes when the asparagus has softened add the peanut butter and coconut milk.
- Prepare the noodles according to the instructions on the package. Once cooked leave to drain and then mix with the sauce. Finally add the prawns, peanuts and spring onions and garnish with coriander.
Serve tip
Serve your dish in a typical Asian serving bowl and eat with chopsticks. Chicken is a great alternative to prawns.
