What could be tastier than working with delicious seasonal produce? Indulge yourself and others with this delicious spicy zucchini soup with sweet potato. The addition of sambal and a chili pepper gives the soup a delicious spicy flavor that pairs perfectly with the sweeter flavors of the potatoes and zucchini. Perfect as an appetizer, but also ideal to eat for lunch.

Ingredients
- 3 tablespoon Rice Oil
- 1 teaspoon Madras Curry (Mild)
- 250 ml Coconut Milk Tetra Pak (18% Fat)
- to taste Opak Pedis Cassava Crackers
1 Onion, chopped
1 Garlic clove, pressed
1 Half red pepper, finely chopped
1 Zucchini (with skin), washed and diced, 2 Sweet potatoes, diced
1 L broth
Juice of half a lime
Pepper and salt
Fresh coriander
2 teaspoons sambal badjak
Preparation method for Spicy zucchini soup
- Heat some rice oil in a soup pot and sauté onion, garlic and chilli in it. Then add curry powder and sambal and simmer for 1 minute.
- Then add the diced zucchini and sweet potato. Pour in the broth and simmer for about 20 minutes until the potatoes and courgettes are done.
- Finely puree the soup with a hand blender and add coconut milk and lime juice. Then season with salt and pepper.
Serve tip
Garnish the soup with fresh cilantro and serve cassava chips with it
