Khao Soi is a delicious Thai noodle soup based on coconut milk. It seems like you need a lot of ingredients, but many of these things you probably already have at home. There are several variations of this meal soup, but they are all delicious!

Ingredients
- 1 can Coconut Milk (14% Fat)
- 3 tbsp Red Curry Paste
- 2 tbsp Rice Oil
- 400 g Chinese Yellow Noodles (Not for DE)
- 2 tsp Chilli Powder (Extra Hot)
- 15 ml Thin Soy Sauce
- 15 ml Fish Sauce
1 jar Grilled peppers drained
3 cloves Garlic: chopped
2 shallots: chopped
1.5 tbsp Ginger grated
720 ml chicken stock
700 g skinless chicken thigh in bite-sized pieces
2 tsp dark caster sugar
1 tbsp lime juice
1/2 red onion: thinly sliced
200 g Bean sprouts
Coriander for garnish
1 Lime cut into wedges
Preparation method for Khao Soi
- Prepare all ingredients.
- Coconut milk and red pepper in the blender until smooth
- Put aside.
- Heat rice oil in a large stockpot. Add garlic and shallot and cook, stirring, until soft, about 3-4 minutes.
- Bake the red curry paste, ginger and chili powder for about 1 minute.
- Pour the chicken stock and coconut milk mixture into the pan.
- Then add the chicken, fish sauce, soy sauce and brown sugar to the pan and bring it to a boil. Then reduce the heat and simmer for 15-20 minutes. Stir occasionally in the pan and add the lime juice at the end.
- Cook the noodles according to the instructions on the package.
- Once the soup is ready, serve with noodles, topped with red onion, bean sprouts, cilantro and lime.
