Boemboe Bali is an Indonesian dish with very many spices, originating from the tropical island of Bali. 'Boemboe' is the Indonesian word for a mix of spices. So literally, this dish means "spice mix from Bali. The Indonesian word for chicken is Ajam, which is why Boemboe Bali is also often called Ajam Bali. Whatever you call it, the Boemboe Bali is a delicious spicy chicken dish in which the combination of ginger, chilies, laos, trassie, palm sugar, garlic and lemongrass creates a true taste explosion! You can also replace the chicken strips with a meat substitute if necessary to make it a vegetarian Bali paste.

Ingredients
- 2 tbsp Peanut Oil
- 5 g Trassie (Fried Shrimp Paste in Block)
- 5 tbsp Sweet Soy Sauce (Ketjap Manis)
- 1 piece Gula Djawa Palm Sugar
1/2 lemon juiced
250 g chicken filets diced or sliced
2 onions sliced
6 cloves of garlic: sliced
20 g Laos
30 g Ginger
2 Lemongrass stalks (Sereh)
2 Tomatoes: diced
4 Salam leaves
2 fresh chilli peppers sliced
Preparation method for Boemboe Bali
- Squeeze the juice from half a lemon and mix together with the chicken strips.
- Peal the Laos and ginger and remove the top layer from the lemon grass stalks. Slice the bottom part off the lemon grass stalk and add all of the items to the mortar. Grind it all together releasing wonderful flavours and aromas.
- Heat 2 tablespoons of oil in a wok pan and fry the onions and garlic. Add the tomatoes and tomato puree. Cook for roughly 2 minutes.
- Add the marinated chicken filets to the frying pan as well as the spice mixture from the mortar. Mix well and fry shortly.
- Now add the palm sugar, shrimp paste, salam leaves and two fresh chillies to the mixture. Leave to simmer for a few minutes.
- Finally add a stock cube and soy sauce and leave to cook for a few more minutes. Enjoy!
Serve tip
Serve the Ajam Bali with a fragrant Jasmine rice.
