Ingredients
- teaspoon Lemongrass Powder
- 3 tbsp Fish Sauce
- 2 tbsp Soy Sauce
- 2 tbsp Brown Rice Vinegar
- 2 tbsp Sesame Oil
Baguette
2 bacon slices
Coriander
75 g grated carrots
0.5 red onion cut into thin rings
2 tbsp sugar
1 tsp salt
75 g cucumber cut into strips
2 tsp brown sugar
Jalapeno rings
2 tbsp mayonnaise
2 tbsp garlic & ginger puree
Preparation method for Banh mi with pork belly
- 1. Start by mixing the vinegar, sugar and salt. Heat until the sugar is dissolved. Mix the liquid half with the carrot, half with the onion. Leave to soak for at least 2 hours. Longer is also possible.
2. Now make the marinade for the bacon slices. Mix the brown sugar, lemongrass, fish sauce, soy sauce, sesame oil, garlic puree and ginger puree. Set aside.
3. Fry the bacon slices to the desired doneness and add the marinade at the end. Allow to thicken briefly.
4. Now start topping the sandwich. Spread a tablespoon of mayonnaise on both sides. Top with cucumber, pickled carrot and red onion (drain well), bacon bits, jalapenos and coriander. Enjoy your meal!
Serve tip
You can also use pork shoulder or chicken thigh instead of bacon strips.
