Chinese Lo Bak Go or rettich cake is a dim sum made from daikon, also called rettich or white radish, the taste of daikon is not as intense as the radish we know in Holland. Lo Bak Go is a well-known dim sum and is a savory dish due to the added shiitake, dried shrimp and Chinese sausage.

Ingredients
500 g Daikon
1.5 tsp Salt
30 g Sugar
240 ml Daikon liquid collected
Springform pan 28 cm
Preparation method for Chinese Lo Bak Go
- Shiitake, dried shrimp and Chinese sausage
- Soak the shiitake and dried shrimp in lukewarm water for 20 minutes.
- Remove the stem and cut the shiitake into small cubes. Roughly chop the dried shrimp into small pieces.
- Soak the sausage in hot water for 10 minutes. Remove the skin from the sausage. Cut the Chinese sausage into small cubes.
- Fry the Chinese sausage in a pan until it gives off a delicious smell. Then add dried shrimp and mushrooms. Fry for 1 minute and set aside. Daikon Blend
- Grate half of the daikon (reserving the liquid) and cut the other half into small strips.
- Add a small amount of the grating liquid and cook in a pan over low heat until the daikon turns slightly white and translucent.
- Add the fried mixture to the daikon.
- Mix together the salt, sugar, daikon liquid, rice flour, cornstarch, and white pepper to form a smooth batter. Add this to the daikon mixture and stir. steaming
- Grease the springform pan.
- Pour the entire mixture into the springform pan and spread evenly over the top.
- Cover the springform pan with aluminum foil and steam over medium heat for 45 minutes.
- Allow to cool well and place in the fridge for 2 hours to set.
- Cut into slices or any shape you like.
- Fry on both sides until it changes color - done!

Serve with soy sauce
