Brace your taste buds for a duo of matcha and white chocolate mousse! This is the dessert you didn't know you needed. A soft, creamy blend of the rich taste of white chocolate with the subtle, earthy tones of matcha. A real treat for your senses!

Ingredients
- 1 tbsp Green Tea Matcha
- 150 g white chocolate, chopped
- 2 egg yolks
- 100 ml milk
- 500 ml whipping cream
- 3 tbsp white caster sugar
- approximately 500 g fresh red fruit such as strawberries, raspberries, blackberries, blueberries, or redcurrants
Preparation method for Duo of Matcha and White Chocolate Mousse
- Start by heating the milk in a saucepan. Note: it should not boil! Meanwhile, whisk the egg yolks with the sugar until smooth. Gradually add the warm milk to the egg yolk mixture, being careful not to scramble the eggs!
- Divide the mixture in half. Add the chopped white chocolate to one half and place it back on low heat until the chocolate melts. Then remove from heat and let both mixtures cool to room temperature.
- Now comes the matcha magic! Whip 250 ml of cream with 2 tablespoons of sugar and a tablespoon of matcha powder. Gently fold this into the cooled mixture without chocolate. Think soft waves, not wild storms.
- Whip 250 ml of cream with 1 tablespoon of sugar and gently fold this into the chocolate mixture.
- Patience is a virtue: refrigerate both mousses for at least 6 hours (or ideally overnight) to set.
- Serve the mousses in elegant cups or on a plate, complemented with fresh red fruit, mint, and grated white chocolate.
Serve tip
To complete this dessert, serve with a glass of sparkling champagne or a fresh Riesling. The bubbles and sweet fruitiness of the wine will perfectly complement the rich mousse. For a non-alcoholic twist, choose a cold-served matcha latte or a refreshing lemonade. Cheers!
