Christmas dinner often consists of several courses - often starting with a soup. This Tom Kha is a deliciously light but well-rounded chicken soup. We gave the soup a Christmas touch by replacing the lime with orange.

Ingredients
- 800 g Coconut Milk (20-22% Fat)
- to taste Dried Lime Leaves
- 1 tbsp Thick Oyster Sauce (Healthy Boy)
1 L chicken or vegetable broth
1 stalk of lemongrass
4 cm Galanga
<100 g mushrooms
2 chicken breast cubes
1 red onion in half rings
1 red pepper in rings
Preparation method for Christmas Tom Kha
- Make a liter of broth and bring it to a boil along with the coconut milk.
- When the soup is boiling add the chicken cubes, allowing them to cook.
- Crush a lemon and add it to the soup along with the Galanga, lime leaves and the champginons. Let this boil briefly.
- Now add the oyster sauce, half of red pepper rings and half of the red onion.
- Let this cook for another minute and then turn off the heat.
- Serve the soup with cilantro and slices of orange. Also sprinkle the remaining onion and pepper over soup for a festive touch.
