If there is one dish that you encounter everywhere in the Philippines it is Pork BBQ! It is both a street food and a dish prepared on special occasions. Filipinos love it because it is easy to make and especially because of its sweet BBQ taste. Almost every Filipino family has its own "secret recipe" for this BBQ recipe and you get it from us!

Ingredients
- a pinch Black Pepper (Whole)
- Bamboo sticks Bamboo Skewers (30,5 cm)
- 1 tbsp Fish Sauce
- 60 ml Sesame Oil
- 240 ml Annatto Powder
1 kg pork shoulder
1 cucumber: sliced
1/2 red onion: chopped
50 g carrots: julienne
1 tbsp honey
1 tbsp water
1 spring onion: ringed
Preparation method for Filipino Style Pork BBQ
- Cut the pork into 2 cm strips.
- Add the barbecue marinade to the pork in a bowl and let it marinate for at least an hour to overnight.
- Meanwhile, prepare the cucumber salad. Start with the dressing. Mix vinegar, honey, fish sauce, water, black pepper and salt in a bowl. Whisk this together well.
- Add the sliced cucumber, red onion and carrot together with the dressing and mix well. Place this in the refrigerator and wait until the rest is ready to serve.
- Thread the marinated pork by three pieces on each bamboo skewer.
- Grill the skewer for 4-5 minutes on each side until desired doneness. While grilling, drizzle some of the remaining barbecue marinade mixed with some oil over the skewers.
Serve tip
Sprinkle spring onion over the skewers and serve with the Azaitian cucumber salad.
