During a hot, sultry summer day, you often don't feel the need for long cooking sessions in a hot kitchen, but you want a great yet light meal. Then this fresh summer salad is a perfect recipe for you! In this salad we make a marinated chicken, combined with mango and puffed rice noodles. Especially the latter gives a very surprising taste to the salad!

Ingredients
- 3 tablespoon Sweet Soy Sauce (Ketjap Manis)
- 1 teaspoon Chilli Paste Oelek
- 2 tablespoon Sesame Oil
- 3 tablespoon Rice Vinegar
- to taste Peanut Oil
2 tbsp Brown caster sugar
1 Garlic clove, pressed
300 g Chicken breast, cut into cubes
1 Bag of mixed salad (300 g)
1 Mango, diced
3 Spring onion stalks, chopped
Preparation method for fresh summer salad
- Mix 2 tablespoons of ketjap, 1 teaspoon of sambal, 1 teaspoon of brown sugar, 1 teaspoon of sesame oil, 2 tablespoons of peanut oil, and a little garlic into a marinade. Marinate the chicken cubes in the homemade marinade for at least 15 minutes .
- Meanwhile, make the dressing: mix together 1 tablespoon brown sugar, 1 tablespoon sesame oil, rice vinegar, 1 tablespoon soy sauce, and 3 tablespoons peanut oil. Mix well.
- Fry the chicken cubes well in a pan.
- Put the salad on the plates.
- Meanwhile, heat a splash of oil in another pan. When the oil is well heated, gradually fry the rice noodles. Make sure they are fully inflated. Then drain on a piece of kitchen paper.
- Now distribute the diced chicken, the mango pieces, the dressing and the puffed noodles on the salad. Garnish with some spring onions and serve with bread or crackers. Bon appetit!
