A surprising variation on the traditional red curry

This delicious rice noodle dish is perfect for vegetarians! You can vary plenty by adding other fresh vegetables as well.

Ingredients
- 150 g Rice Sticks 3 mm (M)
- 1 tablespoon Red Curry Paste
- 2 tablespoons Rice Oil
- 2 tbps Thin Soy Sauce
100 g Small green asparagus, cut into 2 cm diagonal pieces
150 g Tofu, diced
2 cm Ginger root, peeled and chopped
Preparation method for fried noodles with green asparagus
- Cook the green asparagus in boiling water with a little salt for 2 minutes, then drain.
- Bring another 2 liters of water to a boil, turn off the stove and soak the rice noodles in the hot water for 3 minutes. Then drain.
- Heat a dash of oil in a wok and stir-fry the tofu for a few minutes until nicely golden brown.
- Now add the ginger root, the asparagus and the curry paste to the wok and stir-fry for about 2 minutes.
- Finally add the soy sauce and noodles and stir well. If necessary, season with a little salt and pepper.
- Serve with a fresh green salad, if you like.
Serve tip
The tofu can also be replaced with diced chicken breast.
