Spicy Thai Vegetable Soup

Gang Jued is a fairly unknown dish to us. It is a delicious vegetarian soup, It is a light, healthy, spicy soup which is often made as a pick-me-up, to boost your health.

Ingredients
- 15 chillies Dried Chilli without Stem
- 1 teaspoon Red Miso Soup Paste
- 900 ml Broth Powder Vegetable
- 2 tbsp Thin Soy Sauce
8 Garlic cloves
0.5 tsp Salt
2 Shallots, chopped
400 g Romaine Lettuce
250 g Fennel
200 g Mushrooms
200 g firm Tofu
150 g Rocket
50 g Mint
20 g Parsley, coarsely chopped
Preparation method for gang jued
- Chili paste
- Soak the chilies in a bowl of boiling water for 30 minutes. Drain, pat dry and chop finely.
- Crush the garlic and salt in a mortar.
- Add the lemongrass, shallots, miso and chili and pound to a paste. Soup
- Pour the broth into a saucepan and bring to a boil over high heat.
- Stir in the soy sauce and chili paste. Add romaine lettuce, fennel and mushrooms and bring to a boil. Let cook for 5 minutes. Reduce the heat to low and simmer for 5 minutes.
- Add the tofu and cook for another 2 minutes.
- Add arugula, mint and parsley and cook for another 2 minutes.
Serve tip
Top with fresh mint
