Japchae is a classic Korean noodle dish. The noodles are made from sweet potato, making it a lot healthier than other noodle dishes. You only need a few ingredients to put this healthy dish on the table. If you don't feel like meat, are a vegetarian, vegan or flexitarian then this Japchae recipe is a must try!

Ingredients
- 2 tsp Roasted White Sesame Seeds
- 250 g Korean Sweet Potato Starch Vermicelli
- 1 tbsp Rice Oil
- 45 ml Thin Soy Sauce
- 10 ml Sesame Oil
2.5 tbsp Sugar
2 tsp finely chopped Garlic
1 small Carrot
1 Onion
5 Shiitake
100 g Spinach
Salt and pepper to tas
Preparation method for Japchae
- Mix 3 tbsp soy sauce,
- 5 tbsp sugar, 2 tbsp sesame oil, 2 tsp finely chopped garlic, 2 tsp white sesame seeds in a small bowl. Make sure that the sugar dissolves well and set the bowl aside.
- Soak the shiitake in lukewarm water for 30 minutes. Then remove the tip and cut the shiitake into slices.
- Cut the julienne carrot and the white onion into half moons.
- Blanch the spinach, then rinse with cold water and squeeze the liquid out of the spinach.
- Cook the noodles according to the instructions on the package and also rinse them with cold water and drain. Cut the noodles a bit shorter, then it is easy to mix in the sauce.
- Mix 2 tbsp of the sauce in the noodles. Heat the noodles in a wok for about 4 minutes and put it separately in a larger bowl.
- Bake the onion and shiitake in half tablespoon of rice oil for 2-3 minutes and then add to the noodles.
- Add the carrot, spinach and the rest of the sauce to the noodles, mix everything and your japchae is ready.
