Kimchi is one of Korea's most famous and healthiest dishes. You can also make Kimchi yourself. It is not difficult, just takes a day's time. But you can keep it for up to 3 months! There are more than 100 variations of Kimchi, so get creative and make your own delicious kimchi.

Ingredients
- 50 g Hot Red Pepper Powder
- 150 ml Fish Sauce Nam Pla Wan
1 Chinese cabbage (approx. 2 kg)
2 tbsp Salt
50 g Sea salt
500 g Daikon, peeled and thinly sliced
5 Garlic cloves, sliced
40 g fresh Ginger, peeled and thinly sliced
½ red onion, sliced
1 Kiwi, finely chopped
1 tbsp Sugar
Preparation method for Kimchi
- Cut the Chinese cabbage into thin strips.
- Place in a bowl, add water and 2 tablespoons salt. Leave for 2 hours.
- Drain the Chinese cabbage and sprinkle with sea salt. Make sure that all of the cabbage is covered with salt, then leave to stand for 2 hours.
- Rinse the soaked cabbage and place in a large bowl.
- Remove the peel from the daikon, garlic, ginger and onion and cut into thin slices. Finely chop the kiwi.
- Mix the above ingredients well with 1 teaspoon of sugar and 50 g of chili powder and add to the Chinese cabbage. Again, make sure that all the cabbage leaves are covered.
- Place the kimchi in an airtight container.
- The kimchi should first be left in the fridge at room temperature for 5 hours and then placed in the fridge for 24 hours. After that, your kimchi is ready!
Serve tip
Kimchi can be stored in the refrigerator for 3 months.
