Indian kitchari is a delicious mung bean curry and is known for its detoxifying properties! It is a vegan dish and you can vary with the vegetables you add. A real boost for your immune system and digestion!

Ingredients
5 cm fresh ginger, grated
1 L water
400 g vegetables
Salt, to taste
Preparation method for Kitchari
- Soak the mung beans in good time. Do so at least 4 hours in advance in plenty of water and add a spoonful of apple cider vinegar. It is best to soak them the day before.
- Peel and finely grate the ginger. Heat coconut oil in a large skillet (wok) and add ginger, cumin, fennel seeds, nigella seeds, cinnamon sticks, cloves, and cardamom. Fry briefly, stirring, until the flavors of the spices unfold. Then add the soaked mung beans and rice. Also fry briefly while stirring.
- Then add the bay leaf, the carrots and the sweet potato and pour in 1 liter of water and the coconut milk. Mix well.
- bring to a boil and turn down the heat. Simmer for about 20 minutes.
- Add the rest of the vegetables. Stir well and add garam masala and turmeric.
- Simmer for another 10 minutes. Taste the dish and season with a little salt. It is important to stir constantly to avoid burning.
