Fortunately, pistachio, cardamom and saffron balance that flavor nicely, creating a delicious dessert that tastes extra good after a nice, long evening of dining. Extra fun: you can make this ice cream in no time and then all you have to do is put it in the freezer for at least 12 hours.

300 ml whipping cream
90 g pistachios (60 g for in the ice cream & 30 g as topping)
optional: a few saffron threads ice cream moulds or ice cream cups
wooden ice cream sticks
Preparation method for Kulfi - Indian ice cream
- Chop the pistachios and small pieces.
- Peel the cardamom pods and crush the seeds in a mortar or with a spoon.
- Put the whipping cream in a bowl with the cardamom and a few threads of saffron. Whip this slightly thicker with a whisk or mixer.
- Add the mango puree, condensed milk and pistachios and stir again.
- Pour the mixture into your ice cream molds.
- Place in the freezer."A few hours later" Top with pistachios and enjoy a delicious ice cream or serve it as dessert. Kulfi takes a little longer to freeze, but melts a little faster than normal ice cream.
