Chicken Adobo is known worldwide as a national Filipino dish. Should you ever visit the Philippines you really must try this dish. But with our help, you can also easily prepare this dish in your own kitchen. Chicken Adobo has the perfect balance of salt, acid and fat combined with the flavorful ingredients of Filipino cuisine. Filipinos love it. There are several ways to prepare this dish, but with this variation, you really imagine yourself in the Philippines for a while!

Ingredients
1kg chicken thighs
120 ml water
3 cloves garlic
Pin of salt
2 tbsp oil
2 medium tomatoes
1 spring onion in rings
Preparation method for Chicken Adobo
- Mix the soy sauce, vinegar, water, black pepper, garlic puree and salt in a large bowl. Make sure it's mixed well. This is your marinade.
- In a small saucepan, bring water to a boil and cook the chicken in it until tender.
- Add the chicken and bay leaves to your marinade. Make sure all pieces of chicken are well covered. Let the chicken marinate for at least 1 hour.
- Meanwhile, make the side dish. Slice 2 medium tomatoes. Then add the fish sauce and spring onion. Set this aside until the rest is ready.
- Once the chicken is marinated put it and the marinade in a medium saucepan and simmer for 15 minutes over medium-high heat or until the marinade is half boiled down. At this point, turn off the heat.
- Take a skillet and add 2 tablespoons of oil. Heat the oil on medium-high heat for about 1-2 minutes. Now remove the chicken from the sauce and place all the chicken in the pan. Fry both sides of the chicken for 3 minutes until golden brown.
- Now pour the sauce into the pan with the chicken.
Serve tip
Serve with rice and a tomato salad.
