philippine paella
With chorizo, seafood and green peas

Paella is, of course, a thoroughly Spanish dish. But with Mama Sita's Caldereta seasoning mix, that delicious seafood dish gets a surprising Filipino twist! Choose your favorite seafood and make this delicious paella!
Ingredients
1 Tbsp Garlic, finely chopped
1 Small onion, finely chopped
2 Tomatoes, diced (without the seeds)
100 g Chorizo sausage, sliced
250 g Fresh blue crab, cleaned and halved
250 g Mussels, cleaned
200 g Squid, cleaned and cut into rings
1 red bell pepper, cut into strips
1.25 Liter water
60 g Green peas (from the freezer)
2 Hard boiled eggs, sliced
Preparation method for philippine paella
- In a medium bowl, mix together the glutinous rice and brown rice. Wash well a few times, drain and set the rice mixture aside.
- Take a large wok or frying pan with a lid and heat the oil in it. Fry the garlic, onion, tomato and chorizo sausage.
- Add the shrimp, mussels and squid and stir-fry over high heat until the seafood gets some colour, about 1 minute. Then add the peppers and stir-fry for another 1 minute.
- Now add the rice and stir-fry for about 1 minute. Then add water, fish sauce, Mama Sita's Caldereta Mix and Mama Sita's Achuete powder. Stir well and bring to a boil. Turn the heat down a little and let it simmer covered for about 10 minutes. Stir occasionally so the base doesn't burn.
- Finally add the green peas and stir well again. Cover the pan again and cook for another 5 minutes or until the rice is nicely cooked (try it!). The paella is ready to serve!
Serve tip
Divide the paella among the plates, making sure to also distribute the seafood well. As a topping, serve Filipino Paella with some slices of hard-boiled egg.
