
Pulled BBQ Jackfruit

Are you already familiar with jackfruit? This huge fruit is the new trend when it comes to meat substitutes. Now I hear you thinking, how can a fruit be a meat substitute? Well, the meaty flesh lends itself ideally to dishes such as 'pulled pork.' And now let's have a delicious recipe for that too! But without pork. With Jackfruit. This is what you want to taste!

Ingredients
2 tsp Brown Sugar
0.5 tsp Salt
0.5 tsp Pepper
1 Onion, chopped
2 Garlic cloves, chopped
0.5 Avocado
0.5 Lemon, squeezed
2 tsp Honey
Bag of salad mix
4 Hard rolls (Tip: Italian roll!)
Preparation method for Pulled BBQ Jackfruit
- Open the can of jackfruit and rinse thoroughly in a colander, then cut off the hard cores until only the fleshy part remains.
- Mix together 2 teaspoons brown sugar, 1 teaspoon paprika, 1 teaspoon garlic powder, 0.5 teaspoon salt, 0.5 teaspoon pepper, and 0.5 teaspoon chilli powder. This is the BBQ seasoning mix that you will be using to marinate the jackfruit. Let the jackfruit marinate in the spice mix for at least 1 hour.
- Heat 3 tablespoons of rice oil in a wok or frying pan. Chop an onion and 2 cloves of garlic and sauté for a few minutes.
- Add the marinated jackfruit pieces to the pan. Add about half the bottle of BBQ sauce (about 150ml) and some water (about 50-100ml). Cover and simmer in the pan for 15-20 minutes. Stir occasionally.
- Briefly scoop the contents of the pan into a separate bowl where you can use 2 forks to pull the jackfruit apart. This is how the jackfruit strips are made.
- Return the shredded jackfruit to the wok or skillet and add some more BBQ sauce and water. Simmer for another 5-10 minutes.
- In the meantime prepare the salad. Finely chop half an avocado, add the juice of half a lemon, 2 teaspoons honey (substitute date syrup/agave syrup, etc. if you like), some salt and pepper and puree to a smooth dressing. You can do this with a fork, but it's easier to do it in a mortar or food processor. Add the salad mix to the dressing and mix well.
- Serve the grilled jackfruit on a sandwich. First put the lettuce on the bun and then generously spread the pulled jackfruit with BBQ on top. Finish with another dollop of BBQ sauce.
