Ramen is a Japanese version of Chinese Lamian (拉 麺), a Japanese noodle soup. It consists of wheat noodles served in a meat- or fish-based broth, often flavored with soy sauce or miso, and uses toppings such as sliced pork, nori, menma and spring onions. With this recipe, we make a delicious savory Miso Ramen Soup!

Ingredients
1 Shallot: chopped
100 g Minced pork
1 tbsp Sugar
1 tbsp Sake
960 ml Chicken stock (pulled / or liquid broth bought at the store)
1 tsp Salt
Preparation method for Ramen Miso
- Chop the shallot, grind the sesame seeds with a mortar (some seeds can remain whole).
- Heat sesame oil in a pan and add the ginger-garlic paste and shallot. Stir fry this all over medium heat until a nice scent comes off.
- Add the minced meat and fry until the meat is brown on the outside.
- Then add the hot chili bean sauce, miso paste, ground sesame seeds and sugar and mix well with the meat.
- Then add the sake and chicken stock and bring it to a light boil.
- Taste the stock and add if necessary. salt and chicken stock. Then let the stock simmer with the lid on the pan.
- Meanwhile, cook the noodles.
- Prepare the ingredients that you want as topping. Laughed bean sprouts, spring onion, boiled egg, seaweed and possibly. some grilled meat.
- When the noodles are ready, drain and use the bowls.
- Start with the noodles, then top up with stock, add your toppings and enjoy!
