Sambal Goreng Telor is a vegetarian side dish of boiled eggs in a spicy sauce. Usually this dish is served with beans such as Sugarsnaps. Once you get used to the spiciness, you can also eat it as breakfast, lunch or snack.

Ingredients
- 2 peppers Dried Chilli without Stem
- 2 tbsp Peanut Oil
- 5 g Trassie (Fried Shrimp Paste in Block)
- 1/2 slice Palm Sugar Slices
- 100 g Coconut Cream Block (68% Fat)
- 2 cubes Bouillon cubes chicken MAGGI pk 60x10g
2 stalks of Lemongrass (sereh)
20 g Ginger root
20 g Laos
3 Large Salam leaves
2 Onions
6 Garlic cloves: sliced
5 Large Tomatoes
3 dl Water (boiling)
4 Eggs (hard boiled and peeled)
400 g Sugarsnaps
Preparation method for Sambal Goreng Telor with beans
- Add the lemongrass, ginger, laos, dried chilies and salam leaves in the mortar and pound the ingredients into a nice paste to release the flavors and fragrances.
- Heat a wok pan with 2 tbsp of oil.
- Add the onions, garlic, trassie, palm sugar and bouillon cubes to the wok pan and wok for a few minutes.
- Then add the mixture from the mortar into the wok.
- Cook the sugar snaps in a pan of water for about 8 minutes until tender.
- Now add the tomatoes, santen (coconut cream block) and 3 dl boiling water to the wok. and stir well so that the Santen dissolves in the water.
- Peel the eggs and add them along with the sugar snaps. Stir well and let it taste!
