Ingredients
- 75 g Dried Shiitake Mushrooms
- 200 g mushrooms
- 250 g risotto rice
- 50 g butter
- 1 red onion
- 2 cloves garlic
- 1 stock cube
- 75 g Parmesan cheese
- thyme
Preparation method for Shiitake Risotto
- Start by soaking the shiitake. Let them soak for an hour in warm water or follow the instructions on the package. This is where the magic begins.
- Now make a rich broth with the shiitake water and a vegetable stock cube. In the meantime, in a pan with a thick bottom, sauté the garlic and onion until they are translucent. Slice the mushrooms and shiitake and add them, along with some thyme to taste. Cook the mushrooms until they are almost done.
- Now it's time for the risotto rice. Add this and cook until the grains become translucent. Then the fun part begins: add the broth little by little and stir gently. Every time the rice absorbs the broth, add a bit more.
- Keep repeating this until the risotto is creamy and the rice is cooked. Turn off the heat, add the grated Parmesan cheese and a knob of butter, and stir well for that silky finish.
