This Thai yellow curry with drumsticks is a delicious heartwarming dish, especially delicious for a cold winter day. It is easy to prepare with Fairtrade Original's delicious yellow curry spice paste. Within 30 minutes you have a delicious and nutritious meal on the table.

Ingredients
2 Onions, chopped
2 red bell peppers, diced
8 Drumsticks
2 Spring Onions, cut into rings
1 Lime, cut into wedges
4 tbsp. thick full fat yogurt
15 g chopped Coriander or Parsley
Preparation method for yellow curry with drumsticks thai style
- First chop the onions. Cut the peppers into small cubes and drain the chickpeas and rinse well.
- Heat 2 tablespoons of rice oil in a wok or pan and sear the chicken thighs well on all sides. Then remove the chicken from the pan and set aside.
- In the same wok or pan, briefly sauté the curry paste over high heat. Add the sliced onion and peppers and stir-fry for 2 minutes. Then add the coconut milk and stir well for about 2 minutes until a nice sauce forms. Now put the legs back into the pan and let them simmer in the curry for about 20 minutes.
- In the meantime, prepare the (basmati) rice according to the instructions on the packet.
- Now add the chickpeas to the curry and mix well. Let the dish warm up a bit.
- Cut the spring onion into rings and the lime into wedges. Serve the yellow curry with the rice and a generous spoonful of thick yogurt. Garnish with spring onions and coriander, if you like.
