
Udon noodles with chicken

Do you ever cook with Udon Noodles? They look a bit weird and thick at first glance, but this wheat noodle has been gaining tremendous popularity in recent years. And rightfully so! In this delicious and simple wok dish, we combine the Udon noodles with fresh broccoli, tender chicken disc fillets and crunchy cashews. A combination to savor! It's ready in no time and also a tremendously healthy meal. Perfect for a busy life.

Ingredients
- 1 tbsp Rice Oil
- to taste Panda Oyster Sauce
- 150 g Dried Shiitake Mushrooms
- 250 g Udon Noodles
- To taste Fish Sauce
- a handful Cashew Kernels
300 g Chicken thighs cut in slices
1 Clove of garlic crushed
150 g Shii-take in slices
200 g Broccoli: in small florets
Preparation method for Udon noodles with chicken
- Heat the rice oil in a wok and add the sliced chicken thighs for about 7 minutes. Afterwards, add the garlic and Shii-take mushrooms and cook for 2 minutes.
- Get two pans and fill both with water. When the water is boiling, cook the Udon noodles according to the instructions on the packaging. Add the broccoli to the other pan of boiling water, and cook for 5 minutes. Don’t let the broccoli get too soft!
- Season the chicken with oyster sauce and fish sauce, and cook for another 5-10 minutes.
- Add the broccoli to the chicken and stir well.
- Now add the Udon noodles and stir everything together.
- Sprinkle cashew nuts over the top of the meal, and enjoy!
Serve tip
Do you like your food spicy? Add a fresh red chilli pepper and sprinkle over the noodles
