
Vegetarian Lo Mein noodles

Fancy a tasty vegetarian dish? Lo Mein is a type of wonton soup but without the broth and is a popular dish at take-out Chinese. This vegetarian version is made with lots of delicious vegetables in it. If you prefer meat or fish in it, that's no problem because that also goes very well with this dish. With this dish, the sauce makes the dish!

Ingredients
- 350 g Mie Noodles
- 1 tbsp Rice Vinegar
- 1 tbsp Sesame Oil
- 2 tbsp Thin Soy Sauce (Healthy Boy)
- 1 tbsp Sriracha Chilli Sauce
400 gr green asparagus
400 gr mangetout
200 gr shiitake
150 gr soy beans
2 spring onions
2 tbsp sunflower oil
1 tbsp fresh ginger grated
1 tbsp garlic grated
Preparation method for Vegetarian Lo Mein noodles
- Cook the noodles according to the instructions on the package, then drain them and mix in some sesame oil so they don't stick together.
- Please break off the hard stalks of the green asparagus, cut them into pieces, clean the mangetout and cut the mushrooms into pieces.
- Blanch the asparagus and mangetout in a pan of hot water and then drain.
- Heat a wok on high heat, pour in the sunflower oil and briefly fry the ginger and garlic. Add all the vegetables and stir-fry on high heat.
- Add the cooked noodles and fry a little more.
- Mix the soy sauce, rice wine and sriracha in a small bowl. Mix this into the dish last and then turn off the heat.
- Spoon the noodles into a deep plate, sprinkle with finely chopped spring onion and enjoy.
